Ingredients for Salad
  • 224 g Fusilli Pasta (dry, high-protein if desired)
  • 1 lb 96/4 Lean Ground Beef
  • 1 Packet Taco Seasoning (split between beef & dressing)
  • 300 g Romaine (chopped)
  • 100 g Grape Tomatoes (halved)
  • 75 g Red Onion (diced)
  • 75 g Bell Pepper (any color, diced)
  • 75 g Corn (frozen, thawed or sautéed)
  • 75 g Black Beans (drained & rinsed)
  • 15 g Cotija Cheese (about 5g sprinkled per serving)
  • 10 g Chopped Cilantro
Ingredients for Creamy Taco Bell Sauce
  • 170 g Plain Non-Fat Greek Yogurt
  • 113 g 2% Cottage Cheese
  • 113 g Taco Bell Fire Sauce
  • 8 g Taco Seasoning

Instructions

Cook the pasta according to package directions. Drain, rinse under cold water, and set aside to cool completely.

Heat a skillet over medium-high heat. Add the ground beef and cook until browned. Drain if needed, then stir in half the taco seasoning with a splash of water. Simmer briefly until thickened.

Add all dressing ingredients into a small blender and blend until smooth and creamy. Chill until ready to use.

In a large mixing bowl, combine the pasta, romaine, grape tomatoes, red onion, bell pepper, corn, black beans, cilantro, and all the dressing. Toss until evenly coated.

Divide salad into 4 bowls or meal prep containers. Top each with 1/4 of the taco-seasoned ground beef and sprinkle 5g of Cotija cheese on top.
